Stuffed Peppers

Base Ingredients; any color peppers, cleaned and halved.
Add-on options: pictured is cooked quinoa, red onions, corn, black beans, cumin.
Make with your choice of grain(rice, amaranth, millet, barley...) veggies, and spices...possibilities are endless. Remember to use what you have on hand and be creative.
What else?: Depending on what ingredients you chose, top with sauces of any kind, cheese, balsamic vinegar, remember, you know what you like!
Spaghetti Squash with Quinoa Meatballs

Base Ingredients: Pictured is spaghetti squash with homemade quinoa meatballs and tomato sauce, and Swiss chard. Feel free to substitute any frozen type of meatball, sauce, or veggies. Use actual,pasta or any squash as a base...whatever appeals to you!
Add-on options: Many vegetables taste good with sauce on them. If you don't eat meat, make some grain, or mushroom "meatball," or just omit.
What else?: If you prefer, just steam some carrots, or other root vegetables, (even your greens) and purée them for a nice clean sauce of your choice.
