Kale and Tofu Salad

Base Ingredients; Kale, shredded carrots, scallions

Add-on options: pictured is tofu. Not a fan – and some sliced lean turkey or chicken, cheese, and be sure to sprinkle in some seeds or nuts for that protein and good oils. Mix your choice of dark leafy greens in, the kale holds any dressing nice so the whole salad does not saturate.

What else?: You could just eat it – lots of various textures, flavors, and colors. Or, mix with your choice of dressing to wet it: spicy brown mustard, lemon or lime juice, heart healthy oil, and/or flavored balsamic vinegar…you know what you like!
 

Cold Broccoli Vegetable Salad

Base Ingredients: Chopped Vegetables

Add-on options: You can create a different dish each time just by just starting with your choice of green vegetables…then begin to add your choice of scallions, red onions, cauliflower, red cabbage, sliced or diced carrots, chopped celery, red peppers.

What else?: You could just eat it – lots of various textures, flavors, and colors. Or, mix with your choice of dressing to wet it: spicy brown mustard, lemon or lime juice, heart healthy oil, and/or creamy yogurt dill dressing…you know what you like! This is a  perfect dish to add some seeds or nuts for some protein and good oils.
