     Vegetable Stock Soup

Base Ingredients; water, garlic, carrots, celery, onion, butternut squash, and spinach at the end

Add-on options: I like to cook and freeze the above ingredients, and then add to it to freshen up when I thaw. I love corn and tomatoes( these are easy to freeze When in season, or convenient to have on hand in he cupboard)  You can also add chicken leftovers, or any veggies you are left with for the week.

What else?: Create chowders, add cheeses, blend it for a smoothie( or to add to spaghetti sauce) ...use what you have on hand...it started with good minerals...so balance your preference to taste.
 

Greens and Beans Soup

Base Ingredients: canelinni beans, turkey bacon, garlic, escarole, vegetable soup broth, or water, salt and pepper to taste

Add-on options: You could substitute pepperoni, regular bacon, or ham for the turkey bacon.  Feel free to use any beans of your choice, and the same for greens.
 

What else?: If you like grated cheese, go for it, but this is so tasty and comforting, it needs nothing!
